refactor: replace deprecated fields() with propertyStream() in ApiDocService (#3838)

# Description of Changes

- Replaced usage of the deprecated `fields()` method on `JsonNode` with
`propertyStream()` in `ApiDocService`.
- This change ensures compatibility with future Jackson versions and
avoids deprecation warnings.
